I've never heard Nickel Creek, so I can't comment on what they do or don't do.
This would be like folks saying that anyone after Jerry Lee Lewis, Carl Perkins, Chuck Berry, and the like, aren't rock-n-rollers. Like you said, music evolves. I'm not overly impressed with what rock-n-roll has become, either, but I have to call it what it is.
